Gluten Free Lasagna with Tinkyada Noodles

A friend of ours has  taken an interest in cooking over the last year and got a homemade sauce recipe from his mom.  Lo was at his house one day when he made lasagna and he came home raving about the sauce.  Lo asked him if he could have some the next time he made it so he could make a pizza with it.  He brought home more sauce a few weeks ago and he made a pizza with some of it, but there was plenty leftover.

I happened to have all of the ingredients for gluten-free lasagna using Tinkyada Brown Rice Lasagna Noodles, so when I was late getting home the night I had planned to make it, Loren must have gotten hangry waiting for me to get home (I was shopping…) and he went ahead and made it- his first time!  I’m lucky to be married to someone who is willing to share the cooking responsibilities and even luckier that he’s pretty good!  I didn’t even ask him if he used a recipe.  I assume he googled for one, though lasagna is kind of a throw together dish.  He used a pack and a half of the lasagna noodles for a 9×13 pan.  He didn’t have quite enough sauce leftover, so he used part of a jar of Mid’s Pasta Sauce.  

He didn’t add additional meat because the sauce was full of sausage and mushrooms.  We have the sauce recipe now, so if we successfully make it and am allowed to share the recipe, I’ll post that at a later date.  Here are the pics of the lasagna.  I highly recommend that brand of noodles!
