Menu Monday: Lotsa Beef

It’s Menu Monday again.  I’m terrible at menu planning because I have no idea what our evenings will bring, so linking up after the fact is that way I need to go.  I bought 10 pounds of ground beef and spent most of this week cooking it up in various ways to stash in the freezer for when we are up to our elbows in dirty diapers in a few months.  I made taco beef, seasoned beef, beef and quinoa meatballs, burgers, and beef and italian sausage mixture.  I used some of the beef for meals through the week, but most of it went into the freezer.  We actually didn’t dine out at all this week for once, though several meals were provided by others for cookouts and my baby shower.

Monday:
Lunch: Leftover cauliflower pizza
Dinner:  Spicy eggplant and beef with green beans

Tuesday:
Lunch:  Eggplant and beef on spinach with green beans
Dinner:  Impromptu cookout at our neighbors; I had a hot dog, baked beans, and chips

Wednesday:
Lunch:  Last of the eggplant and beef on spinach
Dinner:  Spicy burger and fries

Thursday:
Lunch:  Burger on spinach
Dinner:  Pizza burger

Friday:
Lunch:  Chicken sausage and Brussels sprouts
Dinner: Lots of black bean salsa and Gf black bean flatbread.  My mom was going to make pizza but didn’t have sauce of any type, so we ended up with more of a flatbread with a little olive oil and garlic.

Saturday:
Lunch:  My family threw a baby shower for us, so lunch was shower food.  I had pulled pork, spinach salad, caprese salad, potato salad, chicken salad, buffalo chicken dip, and probably some things I’m forgetting.  I also had a variety of cupcakes throughout the day and evening.
Dinner:  More shower food, then a piece of the black bean flatbread later on when my stomach didn’t feel quite right.

Sunday:
Lunch:  Leftover shower food
Dinner:  Dinner at Chuck and Kelley’s before the start of the new season of Breaking Bad.  Pineapple and Bacon Chicken Sausage, glazed sweet potatoes, spinach salad, and cantaloupe
