Menu Monday: Poor Man’s Week?

It’s Menu Monday again.  I’m terrible at menu planning because I have no idea what our evenings will bring, so linking up after the fact is that way I need to go.  This week was unintentionally Poor Man’s week…hot dogs, quesadillas, pulled pork, tacos, and sausage.  At least we went a little high class with sushi.  I was craving quesadillas and refried beans this week (though I don’t turn those things down even when I’m not pregnant).

Monday:
Lunch:  Leftover Pei Wei Sweet and Sour Chicken
Dinner: Sushi at Tanuki – I had cooked rolls of course.

Tuesday:
Lunch:  I can’t remember….
Dinner:  Chicken hot dogs, sauteed mushrooms, and sweet potato hash.  I bought the wrong hot dogs and were disappointed in these.

Wednesday:
Lunch:  Chicken hot dog and sweet potato hash
Dinner:  Part of a bean and mushroom quesadilla (with homemade refried beans)

Thursday:
Lunch: Bean and mushroom quesadilla (with homemade refried beans)
Dinner:  1/2 bean quesadilla (after 2 scoops of ice cream at Graeters for Dogs’ Night Out).

Friday:
Lunch: 1/2 bean quesadilla and brussel sprouts (yes, random)
Dinner:  BBQ Pork Platter at Gallos Pit BBQ

Saturday:
Lunch:  1/2 sandwich and salad at Jason’s Deli
Dinner:  Homemade beef tacos

Sunday:
Lunch:  I had a late breakfast of eggs, turkey sausage, and a piece of Udi’s toast – and then an awesome corn and black bean dip with fritos.
Dinner:  Chicken sausage, cucumber salad, sweet potato, and cantaloupe.
