Salmon Burgers

Gluten Free Salmon Burgers

  •  6 oz. canned salmon, drained (I prefer boneless, skinless)
  • 1/2 onion (finely chopped)
  • 1 egg
  • 2 oz. crushed crackers, potato chips, or other crumbs
  • 1/4 cup oats
  • 1 tsp cayenne pepper
  • 1 tsp lemon juice
  • salt
  • pepper
  • 1 tbsps vegetable oil or cooking spray

Mix all ingredients (except oil) in a bowl with a fork.  Heat oil in pan on medium, preferably cast iron.  Form into 4 patties.  Cook for approximately 4 minutes per side until patties are cooked to your desired level.  I ate mine on a leaf of lettuce with pepper strips and tater tots on the side.

I’ve made these before using essentially the same recipe except I added fresh cilantro.  I included the picture below because they turned out prettier than the ones above!  These were topped with some sort of sauce that we made for something else.
