Menu Monday: Pizza and leftovers

It’s Menu Monday again.  I’m terrible at menu planning because I have no idea what our evenings will bring, so it’s easy to post our meals after the fact.

We were very busy this week with evening activities, so we basically ate whatever we had leftover or could pull together pretty quickly.  It wasn’t a very healthy week, but I didn’t have much of an appetite most evenings.

Monday:
Lunch: Leftover burger and waffle fries
Dinner:  Leftover chicken pasta bake (still).  We added more sauce since the pasta had soaked most of it up.  That made it better.  I also make some zucchini gratin, but didn’t eat it that night.chicken pasta bake 2

Tuesday:
Lunch:  Leftover guten-free apricot chicken pizza
Dinner:  Before I ate, I made a pb cookie dough dip and tasted it a few too many times while I was making it.  I ended up feeling sick from eating it on an empty stomach.  I knew i needed some nutrients, so I had some veggies and dip and squash gratin, followed by some cheese, pepperoni, crackers, and popcorn at a friend’s house during the US v. Mexico soccer games (our husbands were at the game).  Not my finest night of eating…but oh well.

Wednesday:
Lunch:  Leftover guten-free apricot chicken pizza
Dinner:  Grilled cheese sandwich and some raw veggies.  I didn’t really want anything, but that worked.

Thursday:
Lunch:  The last of the leftover chicken pasta bake
Dinner:  Spinelli’s Deli!  It was one of our favorite quick meal places when we lived downtown (right behind it), so when we needed somewhere to eat quickly before our baby care class, it was perfect.  They have good gluten-free bread, so it’s one of the only good places for me to get a sandwich.  It was pretty awesome.  They also had gluten-free cookies by Bake Me Happy that were great!

Friday:
Lunch:  Zucchini gratin and egg bake
Dinner:  We met friends for dinner at Old Bag of Nails.  The table split nachos and then I had clam chowder soup and broiled fish.

Saturday:
Lunch:  We had a late breakfast (egg bake) and then I had a corner of Flyer’s GF pizza before I went shopping.  Never go shopping on a Saturday – especially at Easton.  It was a nightmare.
Dinner:  More pizza and then we went to a friends’ house to watch the Buckeye game and I had some nacho salad stuff, cheese, hummus, and cookie dough dip with pretzels.

Sunday:
Lunch:  Brunch at the baby shower that Lo’s family threw for us.  We had egg bake, sausage, fruit, cheeseball, and all kinds of tasty things.
Dinner:  Leftover gf pizza from Flyers
