Menu Monday: Lotsa Pork

It’s Menu Monday again.  I’m terrible at menu planning because I have no idea what our evenings will bring, so it’s easy to post our meals after the fact.

We had trouble remembering some of our meals this week – I may have even mixed up some of our lunches.  Our menu was mostly filled with pork.  We had lots of leftover pulled pork from the shower and I picked up a Honeybaked ham to freeze while they were 25% off.

Monday:
Lunch: Pulled pork and cheesy potatoes (shower leftovers, yum!)
Dinner: Pulled pork and cheesy potatoes

Tuesday:
Lunch:  Pulled pork and cheesy potatoes
Dinner:  We cannot remember what we had… I had to take eggbake to a work thing on Wednesday, so we made an extra eggbake to eat at home, but it wasn’t going to be ready in time to eat.  I can’t remember what we had instead.  Maybe pork?

Wednesday:
Lunch:  I’m guessing a spinach salad and leftover pork.
Dinner:  Tanuki Sushi.  I had a Living Social to use up.  I had a King Crab roll and avocado roll.

Thursday:
Lunch:  Chicken salad on spinach salad
Dinner:  Sliced ham and stir fry veggies (random combo, but we were just trying for something quick after spending much of the evening painting the glider and desk.

Friday:
Lunch:  Chicken salad on spinach salad
Dinner: 1/2 of a gluten free BBQ chicken pineapple calzone from the freezer.

Saturday:
Lunch:  Grilled cheese (made in the new Airfryer that I won!)

Dinner:  Yabo’s Tacos!  This has kind of become a weekly thing (if not more than weekly).

Sunday:
Lunch:  1/2 of a gluten free BBQ chicken pineapple calzone from the freezer.
Dinner: Ham omelet and stir fry veggies (again random, but needed something easy and quick)
